Superfood Cookies (or a crust)

Superfood Coconut Cookies


makes about 16
2 cups coconut flakes, fine cut
1 cup favorite nuts or seeds (I like walnuts), ground
1/2 cup goji berries, ground
4 medjool dates or dried figs
2 T mesquite pod meal
1 T maca powder
1 tsp reishi extract
1 tsp shilajit
pinch cinnamon, nutmeg
pinch himalayan salt
2 T Diviana Nectar or raw honey

Grind nuts and goji berries in food processor until fine. Mix all ingredients in food processor until combined and sticking together easily between your fingers. It should look like a crumbly dough. Shape how you desire and chill 30 minutes or longer (no refrigeration needed though).

Have made these a number of times recently for the holidays, and while I really enjoy the lucuma balls (or bites) from the store, this recipe is fast becoming my favorite. Made it using brazil nuts.. :-)

Tonight just made a batch for a cookie swap. Processed the mixture in the food processor a little too long so that the mixture was a little oily, but not overly so. Took some fine coconut flakes and maca powder and mixed them together in a bowl. Then rolled (and pressed) the balls in the mixture and it added a nice "sweetened coconut" flavor and texture and dried the outside of the balls a little. Had to press the mixture into the ball somewhat to make more stick.

Soon as refrigerated for a little while everything hardened up nice and life was great!!
